Rabbit (or Chicken) with Thyme

Ingredients:

  • 1 heaped teaspoon plain flour
  • 2 tablespoons olive oil
  • 4-6 rabbit portions (or chicken)
  • 125g smoked bacon
  • 125g shallots (finely chopped)
  • 3 garlic cloves
  • 2 sticks celery
  • 2 tablespoons thyme (stems too unless very woody)
  • 150ml white wine
  • 300 ml stock
  • Method

    Preheat the oven to Gas Mark4/180C/350F.

    Sprinkle the flour over the meat portions.  Heat the oil in a heavy casserole pan and brown the meat all over.  Remove with a slotted spoon and then add the bacon, shallots, garlic and celery to the pan.  Fry gently for ten minutes stirring occasionally.

    Return the meat to the casserole and add the wine, stock and thyme.  Stir well and season with salt and pepper.  Bring to a slow simmer.

    Cover with a lid and place in the pre-heated oven for 1.5 – 2 hrs, basting once. (If you want to serve the dish the following day remove from the oven after one hour, cool and refrigerate over night. Next day reheat for 30 mins at Gas 4/180/350)
